For centuries it was the capital of the salt trade and home to fabulously wealthy merchants who left behind classical gardens and a refined cuisine. Today it's a calm city compared with nearby Nanjing or Shanghai, laced with canals and gardens and the Slender West Lake. It also gives its name to the well-known Yangzhou fried rice.
